Colorful Food

I learned from my cooking class at BYU that you need to make the meal colorful.  Sometimes when I cook chicken and rice I tell Ben, "I would get a bad grade on this meal because it is all white".  So we try to go for as much color as possible!  Here is one of our colorful meals: Red Quinoa, Baked Sweet Potato fries, Green salad with cashews, yellow squash and green onions.  This was also a vegetarian test.  We purposefully didn't eat any meat that meal, but got our protein from other sources like the quinoa and cashews.  (We will never go completely vegetarian, but it is good to skip meat every once in a while).
